1. Set a grill/smoker to 350°F.
2. Smoke the bacon over indirect heat for 30 minutes, or until crispy. Remove from the heat and transfer to a plate to cool.
3. Slice the tomatoes to your desired thickness and grill for 2 to 3 minutes on each side, then remove from the heat.
4. While the tomatoes are cooking, toast the bread directly on the grill until browned on both sides.
5. Spread mayo over the bread slices. On half the slices, layer some bacon, lettuce, tomato, salt and pepper, and more bacon on top, and finish with a second slice of bread.
