Smoked and Griddled Hot Dog Bites

What we love most about traveling is not what we see, but who we meet. We were set up next to the Travis Pastrana race team at the 2023 Daytona 500 for our FOX & Friends segments. The race team was gifted with two hundred beef hot dogs by a sponsor, but no buns and no condiments. They were thrilled to meet us and see if we could help with cooking them. It was a win-win! With some quick thinking, we smoked them for an hour, cut them into bite-size pieces, put them on the griddle with some BBQ rub and sauce, and served them up as an appetizer for a big crowd. This experience taught us that even with simple ingredients like beef hot dogs, you can make something extraordinary. This recipe is now a staple in our cooking repertoire, and we love to whip them up for special occasions! They’re always a hit with the crowd, and they’re so simple to make.

Ingredients

  • 8 Large Beef Hot Dogs
  • Alabama White Sauce (Page 80)
  • Your Favorite Hot Sauce (Optional)

Directions

  1. Set a grill/smoker to 225°F.
  2. Place the hot dogs on the middle rack, making sure they are not touching each other, and place a pan under them to ensure no direct heat is hitting them. Smoke over indirect heat for 1 hour.
  3. Remove the hot dogs and cut into 1-inch pieces. Place them on a griddle or in a cast-iron skillet over medium-high heat and cook, tossing them frequently for 8 to 10 minutes.

4. While on the griddle, add Alabama whitesauce, and if you want a kick, add your favorite hot sauce, and continue
cooking for 2 to 3 minutes.

Pro Tip

  • Add your favorite spicy BBQ seasoning and/or hot sauce when tossing the hot dogs on the griddle for some extra kick.
