In a small bowl, stir together the mustard and honey. Add the melted butter, then stir in the poppy seeds.
Split the buns sandwich- style, leaving the top and bottom attached at the hinge. Lightly coat the cut sides of the buns with the mustard mixture and griddle for 2 to 3 minutes, until toasted.
While the buns are toasting, place the ham directly on the griddle and top each slice with a slice of cheese. Cook until the cheese begins to melt, 3 to 4 minutes.
Spread mayo on the cut side of the slider buns.
When cheese begins to melt, place the ham and cheese inside the buns. Brush the bun tops with some of the mustard mixture and toast on the griddle for 3 to 5 minutes more. Serve and enjoy.
