Mini Blueberry Breakfast Fatty

Baked pork breakfast fatty with sausage and blueberry muffins

Ingredients

  • 1 lb. of ground mild sausage 
  • 3 to 4 mini blueberry muffins, pre-baked
  • Salt and pepper  
  • Maple syrup   
  • Apple pie seasoning
  • (Optional) South Carolina mustard BBQ sauce 

Directions

  1. Preheat grill/smoker to 250˚F.
  2. Flatten sausage into square shape, approximately 8” x 10” on wax paper.
  3. Crumble blueberry muffins and form into log in the center of the sausage.  
  4. Season with salt, pepper, and drizzle muffins with maple syrup to taste.
  5. Roll sausage around muffin and form into the fatty log.
  6. Fully enclose both ends of muffins with sausage.   
  7. Grill/smoke with indirect heat until for 2 hours or until internal temp reaches 160˚F.
  8. Drizzle with syrup halfway through cooking.
  9. Slice into 1-inch cuts and drizzle with more syrup to taste.
  10. Serve, Enjoy!!

Pro Tip

  • For a micro mini fatty, take ½ lb. sausage and wrap with mini muffin stick.
  • Also, for oven option, bake fatty at 350˚F for 30 minutes or until internal temp reaches 160˚F. 
  • Drizzle with South Carolina mustard BBQ sauce before cutting.
