Breakfast Quesadilla

Griddled breakfast sausage quesadilla served with peppers and cheese.

Ingredients

  • 2 large soft tortilla shells (or burrito style for preference)
  • Butter
  • 1 lb. breakfast sausage    
  • 8 large eggs
  • 1 green bell pepper, diced
  • 1 red bell pepper, diced
  • 1 small yellow onion, diced
  • 2 jalapeno peppers, de-seeded (and chopped?)
  • Kosher salt and pepper
  • Blended Mexican style shredded cheese
  • Your favorite hot sauce
  • Fresh cilantro, chopped (optional)

Directions

  1. Preheat griddle to high heat.
  2. Dice up the green and red bell pepper, onion, and jalapenos.
  3. Add butter to griddle and sauté all 4 together with salt and pepper until soft. Push to side of griddle to keep warm while working on next steps.
  4. Place sausage on griddle and brown.
  5. Once the sausage is close to done, mix in vegetables and push to the side of the griddle.
  6. Scramble eggs on griddle, once done mix back in sausage and vegetables and push aside.
  7. Add butter to griddle and place one soft tortilla on griddle and layer with cheese.
  8. Place sausage mixture on top of cheese and add more cheese on top.
  9. Place second soft tortilla shell directly on top of quesadilla.
  10. Cook for 3 to 5 minutes, flipping once or twice until shells are browned.
  11. Slice, like a pizza, into sizes that fits your crowd.
  12. Garnish with chopped cilantro to taste (optional).

Pro Tip

  • Add hot sauce as topping to quesadilla and layer on cilantro to taste, inside or on outside.
