Sweet-and-Spicy Wings

Ingredients

  • Apple wood chunks
  • 2 tablespoons black pepper
  • 1 tablespoon kosher salt
  • 1 tablespoon garlic powder
  • 1 tablespoon onion powder
  • 1 tablespoon chili powder
  • 6 pounds chicken wings
  • 1 cup honey
  • 1 cup hot BBQ sauce
  • 1/4 cup apple juice

Directions

1.  Set a grill/smoker to 250°F and add the wood chunks.

2. Mix all dry seasonings together and completely coat all wings and let sit for 30 minutes.

3. Place wings on indirect heat, smoke for 1 hour or until 165°F internal temp.

4.  In a saucepan, blend together honey, BBQ sauce, and apple juice on low heat.

5. Remove wings and place in 9 x 13-inch aluminum pan, then drizzle with the honey BBQ blend.

6. Place back on the grill/smoker and cook at 350°F until the internal temp reaches 180 to 200°F.

Pro Tip

  • If you want extra done and crispy wings, remove them from the pan and sear them on a hot grill direct for 3 to 5 minutes; using two spatulas, flip them like you would rice on a griddle.
