1. Set a grill/smoker to 275F and add the wood chunks.
2. Score the ham with 1-inch squares, 1/2 inch deep, and place in a 9 x 13-inch pan. (Scoring the ham not only gives it a festive look, it also allows the glaze to elevate the flavor of the meat.)
3. Smoke in the pan on the middle rack for 2 to 3 hours.
4. In a medium bowl and simmer ham glaze over medium heat.
5. Pour the glaze mixture over the ham and continue smoking for 30 additional minutes.
6. Serve with honey mustard sauce
