Pork Loin

Ingredients

  • 1 (8- to 10-pound) whole boneless pork loin
  • DADGUM Good Seasoning or High Five Sweet Rub

Directions

  1. Set a grill/smoker to 225°F.
  2. Place the pork loin in a pan (for easy cleanup) and liberally season the entire loin with DADGUM Good Seasoning.
  3. Place the pork on the middle rack and smoke for 2 hours, or until the internal temp reaches 125° to 130°F. Pull and let rest for 20 minutes. Turn the grill up to 600°F.
  4. Cut the loin in half right through the middle and then cut each half in half again lengthwise. Season all sides of the smaller loins.
  5. Place the pork on the grill, cut-side down, and sear for 2 to 3 minutes, or until the internal temp reaches 145°F.
  6. Remove and let rest for 15 minutes, then cut into 1/2-inch-thick slices and enjoy.

Pro Tip

  • After carving the pork loin, let it sit on the cutting board in its own juices for even more flavor.
