Patriotic Red, White, and Blue Wings

Smoked patriotic wings with a red, white, and blue sauce.

Wings Ingredients

  • 4 pounds of chicken wings
  • ¼ cup kosher salt
  • ¼ cup black pepper
  • Apple wood chunks

Wings Directions

  1. Preheat smoker to 275˚F and add wood.
  2. Salt and pepper wings.
  3. Smoke wings on rack with in-direct heat for 1 hour or until 160˚F internal temp.
  4. Remove from smoker and place wings in aluminum pan and coat with your choice of Red, White, or Blue sauce separately, do not mix sauces (save half of the sauce for dipping).
  5. Put back on grill or in oven at 400˚F for 15 minutes or until wing reaches 180˚F internal temp.

Red Hot Sauce Ingredients

  • 1 stick butter
  • 1 cup, your favorite hot sauce
  • 1 cup ketchup
  • 1 teaspoon garlic powder
  • Cajun seasoning – to taste

Red Hot Sauce Directions

1.  In small saucepan melt butter, add hot sauce, ketchup, garlic powder and Cajun powder and simmer for 15 minutes, stir every few minutes.

Alabama White Sauce Ingredients

  • 2 cups of mayo
  • 1 cup of apple cider vinegar
  • ½ tablespoon of cayenne
  • Kosher salt
  • Black pepper

Alabama White Sauce Directions

1.  In small saucepan, add mayo, vinegar, cayenne, salt and pepper and simmer on medium low for 15 minutes, stir every few minutes.

Blue Wings Ingredients

  • 1 cup of blue cheese dressing
  • ½ cup of hot sauce
  • ¼ cup of molasses
  • 1 tablespoon minced garlic
  • 1 teaspoon celery salt
  • 1 teaspoon black pepper

Blue Wings Directions

1. In small saucepan, add dressing, hot sauce, molasses, garlic, celery salt, pepper, and simmer on medium low for 15 minutes, stir every few minutes.

Pro Tip

  • Place smoked wings on griddle on high heat and drizzle red sauce over wings to sear to desired crispness, save half the sauce for dipping.
