Don’s Cast Iron Skillet Steak

This recipe for Don's Cast Iron Skillet Steak delivers a perfectly cooked prime ribeye with incredible flavor. It starts with a unique skillet sear in herb-infused butter, followed by a high-heat grill finish. This method creates a beautiful crust and a tender, juicy interior, ensuring a restaurant-quality steak every time.

Ingredients

  • 2 (12- to 16-ounce) prime cut ribeye
    steaks (1 ½ inches thick)
  • Kosher salt
  • Freshly ground black pepper
  • 1 stick salted butter
  • 6 sprigs thyme
  • 6 garlic cloves, smashed and
    peeled 

Directions

1. Set a grill to 450°F or on medium-­ high heat. Place a cast-­ iron skillet directly on the grill rack to preheat.

2. Season the steaks with salt first and then with pepper. Let sit at room temperature for 30 minutes while the grill is heating.

3. Put the butter in the hot skillet on the
grill. When it has melted, add the thyme and garlic and stir together.

4. Place the steaks in the skillet and cook for 10 minutes, or until the internal temp reaches 100°F.

5. Remove the skillet from the grill, place the steaks in a separate pan, and let rest for 10 minutes.

6. Turn the grill up to 700°F or as hot as it can get.

7.  Dredge the steaks in the butter mixture left in the skillet, then place them directly on the grill grates and sear for 1
minute per side, or until the internal temperature reaches 125°F.

8. Pull the steaks from the grill, let rest for an additional 10 minutes, then slice against the grain and serve.

1 inch thick: 30 seconds

1½ inches thick: 1 minute
