Brians Seared New York Strip

This Brian's Seared New York Strip recipe offers a unique approach to enjoying a perfectly cooked steak. New York strip steaks are quickly seared at high heat, then sliced and topped with a savory panko, cheese, and butter mixture before finishing on the grill to a perfect medium-rare.

Ingredients

  • 2 (16-ounce) New York strip steaks
  • Kosher salt and black pepper Garlic
    powder
  • 4 tablespoons (1/2 stick) salted
    butter, melted
  • ¼ cup panko breadcrumbs
  • ¼ cup shredded Monterey Jack cheese
  • 1 tablespoon sugar
  • ¼ cup sour cream
  • ¼ cup Duke’s mayonnaise 1 tablespoon
    sriracha

Directions

1. Set a grill to 700°F or as hot as it can get.

2. Season the steaks with salt, pepper, and garlic powder to taste and let sit at room temperature for 10 to 15 minutes.

3. Sear the steaks for 1 minute per side. Removeand let rest for 10 minutes.

4. While the steak is resting, in a small bowl, mix the melted butter, panko, cheese, and sugar until evenly combined.

5. Cut the steak into 1/2-inch-thick slices and place in a cast-iron skillet, but keep the pieces lined up together.

6. Cover the steak slices with the butter mixture and put the skillet directly on the grill grate. Cook at 350°F for 10 to 20
minutes, until the steak reaches medium-rare doneness.

7. Mix together sour cream, mayo, and sriracha for a creamy sauce to top the steak with.

Pro Tip

IN THE KITCHEN: The steaks can be seared in a
cast-iron skillet on the stovetop over high heat, then placed in the oven on
the middle rack to fin-ish cooking at 350°F for 10 to 20 minutes, until
medium-rare.
