Smoked beef and pork BBQ meatloaf minis.

2 cups onion, finely chopped
2 cups green pepper, finely chopped
2 teaspoon minced garlic
2 tablespoon extra virgin olive oil
2 lbs. lean ground beef
1 lb. fresh Italian sausage
1 cup BBQ sauce
1 cup fresh breadcrumbs
2 large eggs, lightly beaten
1 teaspoon kosher salt
1 teaspoon black pepper
1/2 teaspoon cayenne pepper
1 cup sweet BBQ sauce
1 – 9” x 13” Aluminum pan with wire cooking rack
1. Set smoker at 275˚F and add wood chunks.
2. Separately from smoker sauté peppers, onions, and garlic on medium heat with olive oil until soft.
3. Remove from heat and pour into large mixing bowl.
4. Add beef, sausage, BBQ sauce, breadcrumbs, eggs, salt, pepper, and cayenne pepper.
5. Mix thoroughly and form mixture into 4 small meatloaf logs and place on rack over aluminum pan.
6. Place pan on middle rack and smoke for 2 hours until internal temperature reaches 160˚F.
7. Lightly brush the top of each meatloaf log with BBQ sauce every 30 minutes while smoking.
8. Allow meatloaf to rest at least 15 minutes before serving.
Place meatloaf logs directly on smoking rack and place pan below to catch drippings.
