Delicious Smoked BBQ Brunswick stew with pulled pork

2 tablespoons olive oil
1 cup onion, diced
1 green bell pepper, diced
1 yellow bell pepper, diced
2 celery stalks, diced
1 tablespoon minced garlic
3 to 5 lbs. pulled pork
2 cans whole diced tomatoes with liquid
2 cans cream corn
2 tablespoons hot sauce
2 tablespoons chili powder
2 teaspoons garlic powder
2 teaspoons BBQ rub
1 teaspoon Kosher salt
1 teaspoon black pepper
1 cup sweet BBQ sauce
1 cup of ketchup
1. In large pot on Med/High heat, add olive oil to sauté onion, peppers, celery, and minced garlic until soft.
2. Combine all remaining ingredients in pot, simmer for 20 mins, stirring every few minutes.
3. Remove from stove, place on grill or smoker and smoke with in-direct heat at 275˚F for 2 to 3 hours, uncovered.
4. Stir every 30 mins to blend flavors together.
5. Removed from smoker, let cool and serve with your favorite bread.
Add 1 ½ lbs. of leftover smoked brisket and 1 ½ lbs. of leftover smoked chicken all finely chopped for a triple meat experience!
