Double Bacon and Cheddar Smash Burger

This Double Bacon and Cheddar Smash Burger is a towering flavor bomb featuring two juicy 80/20 beef patties seasoned with BBQ rub, seared to perfection, and stacked with melted cheddar, crispy bacon weaves, fresh tomato, and lettuce on a toasted bun with Duke’s mayo. A brush of sweet BBQ sauce and an optional bacon-blended patty take it to the next level.

Ingredients

  • 2 pounds 80/20 ground beef 2 large eggs, beaten
  • 1 tablespoon Lanes BBQ Sweet Heat BBQ rub
  • ¼ cup tomato-based BBQ sauce 
  • 8 slices cheddar cheese
  • 1 pound bacon, halved lengthwise
  • 4 large hamburger buns 
  • Duke’s mayonnaise
  • 1 large tomato, sliced 
  • 1 head lettuce
  • Kosher salt and black pepper

Directions

  1. Heat a griddle to high.
  2. In a large bowl, combine the ground beef, eggs, and BBQ rub and mix evenly. Form the meat mixture into eight 4-ounce balls.
  3. Place the balls on the griddle and smash them with a spatula. Cook for 5 minutes, flip, and brush with BBQ sauce. Cook for 5 minutes more, or until the burgers reach medium doneness. Place the cheese slices on burgers for the last two minutes to melt the cheese.
  4. Cut bacon in half lengthwise and make a 3 x 3 weave. Cook alongside the burgers to the desired crispiness.
  5. Toast the buns on the griddle until golden brown.
  6. To build the burgers, spread the buns with mayo, add your first burger, then a mini bacon weave, followed by a second burger, tomato, lettuce, and finally salt and pepper to taste.

Pro Tip

Chop half the bacon before cooking and add it to the raw hamburger mixture for another level of flavor.
